Truffle season.

In winter they lie hidden, buried in the ground waiting to be discovered. When the cold comes, it is when they reach their fullness. Everyone loves it, everyone wants to cook it, everyone wants to taste it. We are talking about one of the treasures that the earth offers us, the black truffle, also known as Tuber Melanosporum.

Now that winter is coming, the season starts. It begins at the end of January and until the beginning of March when it reaches its optimum point of maturation and for this reason, we take the opportunity to create dishes and monographic set menus with one of the most precious products of gastronomy.
